Sea Scallops with Ginger, Garlic and Chilies
Ingredients
1 lb fresh sea scallops | ||
4 celery stalks (tender inside stalks) | ||
1 bunch of scallions cut on a bias | ||
1 oz piece of fresh ginger, peeled | ||
3 large cloves of garlic | ||
3 tbs virgin olive oil | ||
1/2 tbs chili powder | ||
2 tbs of lemon juice | ||
2 tbs of dark soy sauce | ||
3tbs chopped cilantro | ||
1 Thai bird pepper halved | ||
Kosher salt and fresh cracked black pepper to taste. | ||

Scallops are one of our favorite sea foods. If you can source fresh scallops. Their sweetness and texture is preferable to frozen.
- Cut the scallops in 1/2 inch discs.
- Slice the celery and onions diagonally.
- Peel and slice the ginger and garlic thinly and halve the Thai pepper.
- Heat the oil in a large skillet. Add the prepared ingredients including the scallops along with the chili powder.
- Gently Stir fry over medium heat for 2 minutes, moving ingredients around the pan constantly
- Pour in the lemon juice, and soy sauce, then stir in two tbs of chopped cillantro
- Taste for seasoning.
- May be served over rice.
