Mexican Torta Sandwich

Ingredients

2 Mexican telera rolls (available at Latin markets0
2 eggs, fried to desired doneness
1/2 lb chorizo sausage, removed from casing and fried
4 slices deli ham
4 slices ripe avocado
4 slices bacon
1/2 cup cilantro, chopped
4 slices yellow onion
4 slices ripe tomato
1/2 cup mayonnaise
kosher salt and black pepper to taste
crushed red pepper to taste
2 tbs vegetable roll
The Mexican Torta sandwich is a staple of Mexican food trucks around the country. Sometimes they contain almost anything you can imagine. The key to a great torta sandwich is the telera roll which is a big round roll that is slightly crusty on the outside and soft on the inside. These sandwiches are big and require two hands to eat them. Makes 2 sandwiches.

  • In a saute pan fry eggs to desired doneness.
  • Remove eggs and set aside.
  • Add the bacon to the same saute pan and cook until slightly crispy. Remove and set aside.
  • Add ham slices to the same saute pan and saute for 1 minute on each side. Set aside
  • Add chorizo to pan and fry until done.
  • To assemble sandwich, slightly toast the rolls.
  • Dress the rolls with mayonnaise on both sides.
  • To the rolls add the ham, bacon,
  • Divide the chorizo in half and add to each sandwich.
  • Top each sandwich with 2 slices of tomato and 2 slices of onion.
  • Top the tomato and onion slices with some cilantro and several slices of avocado.
  • Top each sandwich with remaining roll and serve.
  • Note: You may use your imagination when making these sandwiches. They take well to virtually any ingredient that you may desire.
