Ingredients:
- 1 lb of broccoli florets, chopped into small pieces
- 2 cups shredded cheese of your choice
- 3 eggs, beaten
- 1 cup Italian bread crumbs
Directions:
- In a bowl add the broccoli and cheese.
- Beat the eggs and add to the broccoli.
- Add the bread crumbs and mix well.
- Using your hands for the mixture into golf ball sized balls.
- Place the balls on a foil covered baking sheet.
- Bake in a preheated 375 degree oven for about 20 minutes, turning halfway through cooking.
- Serve.

Sounds good. I will have to try it for my daughter and even myself. I find broccoli so boring but I love cheese. Will let you know how it turns out :-)

Cheese Balls is to stay healthy. It is a beautiful yummy.
I tried it! My balls didn't hold together very well, so next time I'll make more of the batter. They taste great though. I used smoked gouda, parmesan, and almond meal instead of flour. I also put some pepper in. The cheese is salty enough that they did not need additional salt. I'm garnishing with Srirachi chili sauce. :)
Did you use frozen broccoli or fresh?
We always use fresh broccoli.
I will try this using potato (as I cannot eat bread)...
Have you ever tried to freeze these for later and then reheat and serve?
These are great! I add a little more cheese because everything is better with cheese! It didn't make 30 balls for me with them being golf ball sized, but next time I'll make them a little smaller. GREAT RECIPE!

Broccoli is my absolute favorite vegie, we have it at least 4 times a week! I plan to make these tonight. I will be using Panko with a bunch of yummy seasonings. Panko is perfect for low sodium people and makes EVERYTHING so much crunchier!
